As food establishment owners and managers it is imperative to maintain your food safely during a power outage. If food falls out of specific temperature ranges for more than four hours it should be considered unsafe and discarded. Cold food must be remain at 41 degrees or lower and frozen food should not be
“refrozen” if thawed during an outage and then sold or used. If your establishment does not have hot water the establishment should remain closed until hot water is restored.
